Udang galah (Macrobranchium rosenbergii) termasuk salah satu komoditas unggulan sektor perikanan budi daya air tawar yang bernilai ekonomis tinggi, tetapi belum dikembangkan secara optimal. Saat ini,selain udang galah lokal yang biasa dibudidayakan peternak, juga ada varietas unggul yang dikenal sebagai udang galah gimacro (genetic improvement of macrobranchium rosenbergii) yang memiliki tingkat pertumbuhan lebih cepat dan bentuk karapasnya lebih kecil dibandingkan dengan ukuran karapas udang galah lokal sehingga kandungan dagingnya lebih banyak.

Pada umur lima bulan, panjang tubuh udang galah gimacro jantan mencapai 38 cm dengan berat tubuh mencapai 480 gram per ekor. Sementara itu, dalam jangka waktu yang sama, panjang tubuh udang galah lokal hanya mencapai 25-28 cm dengan berat tubuh hanya 200 gram per ekor. Bahkan, ukuran maksimum udang galah lokal yang pernah ditemukan di alam bebas hanya 300 gram per ekornya. Itu sebabnya udang galah gimacro dijuluki sebagai udang galah super karena pertumbuhanya sangat cepat.

nilai tambah udang galah lainnya adalah waktu pemeliharaan yang relatif singkat, yaitu 3 - 5 bulan.
